Lemon Pepper Tilapia

This dish is quick and simple, yet oh so delicious. Even my friends and kids that don’t usually like fish, like this one. I use tilapia filets, because it has no bone surprises, and is readily available and relatively inexpensive where I live, but any mild fish would do.

2 tilapia filets
1 tbsp butter
lemon-pepper seasoning, to taste
lemon slice and/or cilantro or parsley leaves for garnish (optional )
Directions
- Thaw out the tilapia filets, and pat dry
- Melt the butter over moderate heat in a skillet large enough to hold the 2 filets. Swirl it around when melted but not browned to coat the skillet’s inside. Add the filets
- Sprinkle the top of the filets with lemon pepper. Saute for about 2 minutes. Flip filets over, and sprinkle with more lemon pepper. Cover and turn the heat to low. Continue to cook for 3 minutes. Carefully flip filets again, cover, and continue to saute for another minute or so, or until the thickest part is tender and flaky. It will usually have a slight browning to the edges of the filet.
- Carefully move the filets to the serving dish. Top with the parsley or cilantro leaves
- This works well with any pasta, rice, or bread,; serve with salad or a cooked vegetable for a complete meal.
