Vege-2-Lee

This is a favorite side dish at our home every summer. Thankfully, I grow a lot of the tomatoes, bell peppers, and eggplants that go into it, so it is fairly affordable.

It takes influence from ‘ratatouille’, a French vegetable stew. Our family renamed it as ‘Vege-2-Lee’ years ago when one of our young daughters worried about…. yeah…. RATS! (Thanks, Disney!!)

Served with a sandwich and a tall glass of iced tea, it makes for a nice meal. My husband enjoys a spoonful tucked into an omelette sometimes, too.

It keeps well in the refrigerator for a day or 2 (if there’s any left!) With my penchant for keeping my freezer stocked with ready-to-eat food, I save it in an oversized ice cube tray. Perfect addition to a lunchbox. and heats in a minute or 2 in the microwave.
