Yes, you CAN believe it’s Butter!

I like the flavor of butter. This butter spread is easy to do, makes my “butter dollar” stretch, and is one less item I have to buy separately at the grocery store. It tastes like butter, but is half oil. I use either olive oil or canola oil, because they are both monounsaturated, which gives this a little bit of a health benefit. (Apologies to those who think that ‘seed oils’ are unhealthy, but until I see some solid proof, I respectfully disagree) Straight out of the refrigerator it glides on toast or anything else smoothly, and tastes better than any margarine I ever ate.

Other than letting the butter soften, the time this takes to make is about 5 minutes or less. Maybe a minute or 2 longer if you use a whisk, rather than a hand blender.

I usually buy my butter on sale, often at holiday time. If you didn’t know, it FREEZES well for up to a year! Just put it in your refrigerator for a day or so before using it.
